Cholesterol lowering foods are those containing plant sterols, plant stanols, or soluble fiber. Soluble fiber is a naturally occurring substance found in certain fruits, vegetables, and grains. Cholesterol research scientists believe that when fiber is digested, it sticks to cholesterol and prevents it from being absorbed. Cholesterol lowering foods high in soluble fiber can include oatmeal, apples, and lentils. Until recently, foods high in soy protein were also thought to be cholesterol lowering foods; however, recent cholesterol research has shown this not to be the case.
