A diet for people with high cholesterol focuses on plant-based products -- such as vegetables and legumes -- while cutting back on animal-based products. Saturated fats are the main cause of increased cholesterol in a diet. Another type of fat, called trans fatty acid (trans fat), has also been shown to increase the level of LDL ("bad" cholesterol), although not as much as saturated fats. Foods that contain trans fat include vegetable shortening, fried foods, and many processed foods.
